Grouchy Muffins. (Recipe)

This afternoon I was gathering together some smoothie 'parts' and began to dream of a 'smoothie muffin.'  Could it be possible?  

So into a bowl I blended my smoothie ingredients, tossed in an egg, spices and sugar...then added dry ingredients to make muffin batter.

The result was this fun green bakery item and it was pretty tasty!

I was thinking of calling them Monster Muffins, but Butterbean saw them and shouted, "Oscar!" So naturally we're calling them Grouchy Muffins instead.

Here's what I threw together...share your creative variations in the comments!

Grouchy Muffins

Get your oven to 350 degrees and grease/paper line your muffin tin (this recipe makes 12).

Ingredients:

1 Cup Sweetened Flavored Kefir (I used Strawberry.)

1 Egg

1/2 Cup Unsweetened Applesauce

1 tsp Vanilla Extract

3/4 Cup Brown Sugar (Packed)

1 Cup Fresh Baby Spinach Leaves (Well Packed)

Blend well the above ingredients in a blender or food processor - or blend in a mixing bowl with a stick blender.  Be certain that all of the spinach is finely chopped - pulverized - and completely incorporated with the other ingredients.

1 Cup All Purpose Flour

1 Cup Whole Wheat Flour

1 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

1 tsp Cinnamon

1/2 tsp Nutmeg

1/4 Cup Rolled Oats (Optional - I thought they added texture.)

**1 Cup Blueberries (Fold In)

**Chopped Nuts (Optional)

Sift the dry ingredients together in a separate bowl, then the add wet ingredients to the dry. (This is the Muffin Method, friends!)  Gently fold together until just combined.  Gently fold in blueberries and spoon into muffin tin.  Top with nuts if desired.  Bake for 15-18 minutes - do not let overbrown.  Edges, not tops, should be slightly brown.
