There's something about the dog days of summer that makes me want to bake and roast things at 400 degrees in my oven. Seriously.
My longing for fall and the scent of cinnamon is somehow magnified by 1,000% between late July and mid-August.
So, in honor of today's high of 88, I whipped up a brand new apple-infused muffin. A healthy muffin.
Now, food police take note. This muffin recipe celebrates grains and, yes, a natural sweetener! Fortunately my blog is not so popular that it will be attacked in the comments section (lol) ... but in case anyone is tempted, let us take pause with the wisdom of our Moravian brothers,
In essentials, unity.
In nonessentials, liberty.
In all things, love.
And we can be unified in the fact that these muffins are better for our overall health than Pop Tarts. Way better.
They showcase oat bran, which is super high in fiber and protein. And they have a little smidgeon of spelt flour. Pretty nutrient-dense little wonder. And they make your house smell like early October. Bake them, then close your eyes and dream. Until the AC kicks on and you sky-dive back to reality.
Apple Spice Oat Bran & Spelt Muffins
2 cups Oat Bran
1 cup Spelt Flour
1/2 tsp Cinnamon (more if you like!)
1/8 tsp Nutmeg
1 TBS Baking Powder
2 tsp Baking Soda
1/2 tsp Salt
1 1/2 cups Unsweetened Applesauce
2 TBS Melted Butter
1/2 Cup Sucanat (Evaporated Cane Juice) or other natural sweetener
Preheat oven to 400 degrees.
Use the muffin method of preparation: Blend dry ingredients in a bowl, blend wet ingredients separately in another bowl. Add wet ingredients to dry, mix just until blended.
Spoon into lined or greased muffin tin. Bake for 10-12 minutes. Enjoy!
And have fun playing around with the recipe! Add raisins, chopped apples, nuts...chocolate? :)
